To create a new timezone on Simplifi:

Open up JAS

Navigate to File → Supervisor Options → Maintenance → Timezones

Press new & enter the timezone name

The timezone MUST be of a IANA type. You can find a list of IANA timezones here: https://en.wikipedia.org/wiki/List_of_tz_database_time_zones 
Timezones apply to the server and can apply to individual organisations. To change the server’s timezone, go to System → Server Settings and select the timezone you’d like to change it to. For an individual organisation, go to Organisation → Timezone and select the timezone you’d like to change it to.
